Celeste Abbiati at first thought, I'd want to do a Tempest Domain Cleric, however, there's definitely another that fits her so much better. The Fathomless Warlock. An entity of the ocean as her patron, of course, being Kyogre. Although, this line from the Fathomless information just, nails the head on the coffin and confirms it for me.

"Perhaps you were born into a generational cult that venerates the Fathomless and its spawn..."

Ruby Walker is a bit more difficult! She has a multitude of ways I can go with her. Famous due to her healing efforts, a class capable of that, being a cleric, bard, or druid in general would make sense. But honestly the more I think about it, the more I can't imagine her being anything more than a Monk. Either Way of the Astral Self or Way of Mercy both work perfectly for her, just in different ways.

Tamaki Hirose would probably be a warlock,,, which would make a lot of sense considering how he entered a bargain to work with team rocket in order to save his mom lmao and how they are the ones who hold power over him but also enable him to continue doing what he does
